Tasting Notes
This clean, fresh, fun wine flaunts all things tropical: guava, passionfruit, and star fruit figure prominently on the finish, while grass, lime zest and pineapple flavours linger on the finish. Gentle carbonation lifts the flavours while keeping things light.
Production Notes
Grapes were hand-picked and meticulously sorted before whole berry fermentation, enabling a gentler process and resulting in clean, fresh juice extraction. We kept fermentation temperatures intentionally low to extend the fermentation time and build complexity. Each vineyard and fruit lot underwent separate fermentation, allowing the distinct characteristics of each to shine. After fermentation, the wines
were carefully blended, stabilized, and cross-flow filtered. The wine's natural spritz from fermentation was preserved and topped up to 3 atmospheres of pressure during bottling, ensuring a refreshing and effervescent final product.
