Production Notes
The fruit was hand harvested on October 20th and was lightly desteemed and crushed, then sent to two open-top tanks for 6 days of cold-soaking. Fermentation then took place over a period of 10 days. Once complete, the wine was racked to stainless to settle and malolactic fermentation initiated. The wine was then pressed off into French cooperage (10% new oak) where it was aged for 10 months before being bottled unfiltered in August 2023.
